Description

A nutritious, protein-packed banana bread that’s perfect for breakfast or as a snack.


Ingredients

Scale
  • 3 ripe bananas
  • 2 cups oat flour
  • 1/2 cup protein powder
  • 1/2 cup honey or maple syrup
  • 1/4 cup almond milk
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup walnuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas until smooth, then add honey or maple syrup, almond milk, and vanilla extract; mix until combined.
  3. Combine the oat flour, protein powder, baking soda, and salt in another bowl.
  4. Add dry ingredients to the wet mixture and stir until just combined. If desired, fold in walnuts or chocolate chips.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes or until a toothpick comes out clean.
  6. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack.

Notes

Store in an airtight container for up to 3 days, or refrigerate for a week. Freeze individual portions for longer storage.
