- 3 ripe bananas
- 2 cups oat flour
- 1/2 cup protein powder
- 1/2 cup honey or maple syrup
- 1/4 cup almond milk
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup walnuts or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Mash the ripe bananas until smooth, then add honey or maple syrup, almond milk, and vanilla extract; mix until combined.
- Combine the oat flour, protein powder, baking soda, and salt in another bowl.
- Add dry ingredients to the wet mixture and stir until just combined. If desired, fold in walnuts or chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes or until a toothpick comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack.
Notes
Store in an airtight container for up to 3 days, or refrigerate for a week. Freeze individual portions for longer storage.
