Description

Deliciously nutty and colorful Pistachio Linzer Cookies with a fruity jam filling, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 cup finely ground pistachios
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 2 1/2 cups all-purpose flour
  • Raspberry or apricot jam
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and powdered sugar until light and fluffy, about 2-3 minutes.
  3. Mix in finely ground pistachios, vanilla extract, almond extract, and salt.
  4. Gradually add flour until just combined, being careful not to over-mix.
  5. Chill the dough in the refrigerator for about 30 minutes.
  6. Roll out the dough on a floured surface to about 1/4 inch thickness.
  7. Cut out shapes for half the cookies and use a smaller cutter to cut the center of the remaining cookies.
  8. Place cookies on a lined baking sheet and bake for 10-12 minutes or until lightly golden.
  9. Allow them to cool completely on a wire rack.
  10. Spread a layer of jam on the solid cookies and top with the cut-out cookies; dust with powdered sugar before serving.
