Description

Delightful cookie cups filled with nutty pistachios and creamy white chocolate, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pistachios, chopped
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. Cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract until well combined.
  4. Whisk together the all-purpose flour, baking soda, and salt in another bowl.
  5. Gradually add the dry mixture to the creamed mixture until just combined.
  6. Fold in the chopped pistachios and white chocolate chips.
  7. Drop tablespoon-sized scoops of dough into the prepared mini muffin tins, pressing down slightly.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Transfer to a wire rack to cool completely.
