- 1/2 cup powdered sugar

- 1 cup pistachios, chopped
- 1/2 cup white chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
- Cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well combined.
- Whisk together the all-purpose flour, baking soda, and salt in another bowl.
- Gradually add the dry mixture to the creamed mixture until just combined.
- Fold in the chopped pistachios and white chocolate chips.
- Drop tablespoon-sized scoops of dough into the prepared mini muffin tins, pressing down slightly.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Transfer to a wire rack to cool completely.
