- 1/4 cup butter
- 1 cup brown sugar
- 1 can (20 oz) sliced pineapple in syrup
- Maraschino cherries (optional)
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup milk
- 1/2 cup vegetable oil
- 3 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 3 large eggs
Instructions
- Preheat the oven to 350°F (175°C) and melt the butter in a round cake pan, covering the bottom evenly. Sprinkle brown sugar over the melted butter.
- Arrange the pineapple slices on top of the brown sugar, optionally adding a Maraschino cherry in the center of each slice.
- In a bowl, mix flour, granulated sugar, baking powder, and salt. In another bowl, whisk together milk, vegetable oil, vanilla, and eggs.
- Combine wet and dry ingredients, mixing until just combined. Pour batter over the pineapple. Bake for 35-40 minutes until a toothpick comes out clean. Cool for 10 minutes before inverting onto a serving plate.
Notes
Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream. Store covered for up to 2 days at room temperature or refrigerated for a week. Freeze wrapped for up to 3 months.
