- 1 (4-6 pound) prime rib roast
- 2–3 tablespoons olive oil
- 3–4 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat the oven to 475°F (245°C).
- Rub the roast with olive oil, minced garlic, salt, pepper, rosemary, and thyme.
- Place the prime rib roast in a roasting pan, bone-side down, and roast for 20 minutes.
- Reduce oven temperature to 325°F (163°C) and roast for 15-20 minutes per pound, or until internal temperature reaches 130°F (54°C).
- Remove from oven and let rest for 20-30 minutes before slicing.
- Slice against the grain and serve with sides of choice.
Notes
Use a meat thermometer for perfect doneness. Allow the meat to come to room temperature for even cooking. Consider adding red wine or broth for extra flavor.
