Ingredients

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the melted butter, granulated sugar, and brown sugar until smooth and glossy. Add eggs one at a time and stir in the vanilla extract.
  3. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add to the wet mixture, mixing until just combined. Fold in chocolate chips and crushed peppermint.
  4. Drop spoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart. Bake for 10-12 minutes until edges are set but centers are soft. Let cool before transferring to a wire rack.

Notes

Chill the dough for 30 minutes before baking to help maintain shape. Use fresh peppermint candies for best flavor.
