Description

A delightful take on traditional pecan pie, these cookies combine rich flavors and crunchy pecans for a cozy autumn treat.


Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chopped pecans
  • 1 egg
  • 1 cup corn syrup
  • 1 teaspoon pure maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the egg and vanilla extract until fully combined.
  4. In another bowl, whisk together flour, baking soda, and salt, then gradually mix into wet ingredients.
  5. Fold in the chopped pecans until evenly distributed.
  6. Scoop spoonfuls of dough onto a parchment-lined baking sheet.
  7. In a small bowl, combine corn syrup and maple syrup, then spoon a small amount over each cookie dough ball.
  8. Bake for 10-12 minutes or until set and lightly golden. Cool on the baking sheet before transferring to a wire rack.

Notes

For a twist, try using walnuts or almonds in place of pecans.
