Instructions
- Preheat your oven to 350°F (175°C).
- Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press into a 9-inch springform pan.
- Beat the softened cream cheese until smooth. Gradually add 1 cup sugar and vanilla extract, mixing until creamy.
- Add eggs one at a time, mixing thoroughly after each addition.
- Pour the cream cheese mixture over the crust in the springform pan.
- Mix chopped pecans, corn syrup, brown sugar, and salt in another bowl, then pour over the cream cheese layer.
- Bake for 60-70 minutes until the center is set but slightly jiggly.
- Cool at room temperature before chilling in the refrigerator for at least 4 hours or overnight.
- Serve cheesecake cold, topped with additional pecans if desired.
