- 2 ripe peaches, sliced
- 1/4 cup butter, melted
- 1/2 cup brown sugar

- 1 teaspoon vanilla extract
- 1 egg
Instructions
- Preheat the oven to 350°F (175°C). Grease a muffin tin to prevent the cakes from sticking.
- In a small bowl, mix the melted butter and brown sugar until well combined. Pour this mixture evenly into the bottom of each muffin cup.
- Place peach slices on top of the sugar mixture in each muffin cup, ensuring they are arranged nicely.
- In another bowl, combine the flour, granulated sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, vanilla extract, and egg until thoroughly blended.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Spoon the batter over the peach slices in the muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cakes cool for a few minutes before inverting them onto plates.
