Delightful peach scones drizzled with a honey vanilla glaze, perfect for breakfast or as a snack.

- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup peaches, peeled and diced
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1 egg
- 1/2 cup powdered sugar
- 2 tablespoons honey
- 1 teaspoon vanilla extract (for glaze)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Gently fold in the diced peaches.
- In a separate bowl, mix together the heavy cream, vanilla extract, and egg.
- Pour the wet ingredients into the dry mixture and stir gently until just combined.
- Turn the dough onto a lightly floured surface and knead gently a few times. Shape it into a 1-inch thick circle.
- Cut the dough into wedges and place on the prepared baking sheet.
- Bake for 15-20 minutes or until golden brown.
- While baking, prepare the glaze by whisking together the powdered sugar, honey, and additional vanilla extract.
- Once out of the oven, drizzle the glaze over the scones and allow to set before serving.
Notes
Use fresh, ripe peaches for best flavor. Store scones in an airtight container for up to 2 days, or freeze for up to 3 months.
