Description

An exciting dessert that combines creamy vanilla ice cream with sweet peaches and a crispy, golden-brown coating.


Ingredients

  • 2 cups vanilla ice cream
  • 1 cup peach slices (fresh or canned)
  • 1 cup corn flakes (crushed)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Vegetable oil (for frying)
  • Whipped cream (for serving)
  • Caramel sauce (for drizzling)

Instructions

  1. Begin by scooping the vanilla ice cream into rounded balls and placing them on a baking sheet. Freeze the ice cream scoops for at least 2 hours or until they are firm.
  2. In one bowl, combine the all-purpose flour, cinnamon, and salt. In another bowl, beat the two large eggs until well mixed.
  3. Remove the frozen ice cream balls from the freezer. Dip each ball into the flour mixture, making sure it’s fully coated, then into the beaten eggs, and finally into the crushed corn flakes until they are coated all around.
  4. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully place the coated ice cream balls into the hot oil. Fry them for about 30 seconds or until golden brown. Once done, remove them and drain on paper towels.
  5. Serve the fried ice cream immediately while it’s still warm. Top with fresh peach slices, a generous dollop of whipped cream, and a drizzle of caramel sauce for that extra sweetness.

Notes

Freeze thoroughly for the best results. You can use panko for extra crunch.
