  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C). In a medium bowl, combine sliced peaches, lemon juice, 1/2 cup sugar, cornstarch, and cinnamon. Toss gently and set this mixture aside to allow the flavors to meld.
  2. Mix the graham cracker crumbs and melted butter until fully combined. Press this mixture firmly into the bottom of a springform pan to create a sturdy crust.
  3. Beat together the softened cream cheese and powdered sugar. Add the vanilla extract and mix until smooth. Then, add the eggs one at a time, ensuring they are well integrated after each addition for a creamy filling.
  4. Pour the cheesecake mixture evenly over the crust in the springform pan. Carefully spoon the peach mixture on top, spreading it gently to ensure even coverage without disturbing the cheesecake layer underneath.
  5. Bake in the preheated oven for about 50-60 minutes, or until the cheesecake is set in the center. A slight jiggle is okay; it will firm up as it cools.
  6. Remove the cheesecake from the oven and allow it to cool at room temperature for about an hour. Then, refrigerate for at least a few hours or preferably overnight before serving for the best texture.
