- 2 cups all-purpose flour
- 2 cups milk
- 4 large eggs
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1 tablespoon vanilla extract
- Butter for cooking
- Cream cheese (for filling)
- Powdered sugar (for filling)
- Whipped cream (optional for topping)
Instructions
- In a bowl, whisk together the flour, milk, eggs, sugar, salt, and vanilla extract until smooth.
- Heat a non-stick skillet over medium heat and add a small amount of butter to coat the surface.
- Pour in a small amount of batter, swirling it around to form a thin layer.
- Cook until the edges start to lift and the underside is golden brown, about 1-2 minutes.
- Carefully flip and cook the other side for about another minute.
- Repeat this process until all the batter is used, stacking the cooked crepes on a plate.
- In a mixing bowl, beat together the cream cheese and powdered sugar until smooth.
- To assemble, take one crepe and spread a layer of the cream cheese filling over the surface.
- Continue to add crepes one by one, spreading filling in between.
- Finish layering until all crepes and filling are used. Top with whipped cream if desired.
Notes
Store in an airtight container in the refrigerator for 3-4 days or freeze individual slices for up to 2 months.
