- 1 tablespoon baking powder

- 1/2 cup unsalted butter, cold and cubed
- 1 tablespoon fresh orange zest
- 3/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, ginger, cinnamon, cardamom, and cloves.
- Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
- Stir in the orange zest. In another bowl, combine the heavy cream and vanilla extract, then gradually add to the dry ingredients, stirring gently until just combined.
- Turn the dough onto a floured surface, pat into a circle about 1 inch thick, and cut into wedges.
- Transfer scones to a baking sheet lined with parchment paper and brush the tops with the beaten egg.
- Bake for 15-20 minutes or until golden brown.
- Serve warm with clotted cream or butter.

Store uneaten scones in an airtight container at room temperature for up to 2 days, or freeze for up to 3 months.
