Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, cold and cubed
  • 1 tablespoon fresh orange zest
  • 3/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, ginger, cinnamon, cardamom, and cloves.
  3. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  4. Stir in the orange zest. In another bowl, combine the heavy cream and vanilla extract, then gradually add to the dry ingredients, stirring gently until just combined.
  5. Turn the dough onto a floured surface, pat into a circle about 1 inch thick, and cut into wedges.
  6. Transfer scones to a baking sheet lined with parchment paper and brush the tops with the beaten egg.
  7. Bake for 15-20 minutes or until golden brown.
  8. Serve warm with clotted cream or butter.
