- 1 lb beef sirloin, sliced thin
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 cups beef broth
- 1 cup sour cream
- 2 cups egg noodles
- 2 tbsp olive oil
- Salt and pepper to taste
- Parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium-high heat.
- Add the sliced beef to the pot, season with salt and pepper, and cook until it is nicely browned on all sides.
- Remove the browned beef from the pot and set it aside. In the same pot, add the chopped onion and minced garlic, sautéing until the onion turns translucent and fragrant.
- Add the sliced mushrooms to the pot and cook until they become soft and begin to release their juices.
- Pour in the beef broth, bringing the mixture to a boil.
- Stir in the egg noodles, then reduce the heat to a simmer. Cook until the noodles are tender, usually about 8 to 10 minutes.
- Return the browned beef to the pot and add the sour cream. Mix everything well until heated through and the sauce is creamy.
- Serve the dish hot, garnished with freshly chopped parsley.
Notes
If you prefer a lighter version, substitute Greek yogurt for sour cream.
