Description

Deliciously soft and subtly sweet rolls made with rolled oats and molasses, perfect for any meal.


Ingredients

  • 2 cups rolled oats
  • 2 cups water
  • 1 packet active dry yeast
  • 1/4 cup molasses
  • 1/4 cup brown sugar
  • 1 teaspoon salt
  • 1/2 cup milk
  • 45 cups all-purpose flour
  • 4 tablespoons unsalted butter (melted)

Instructions

  1. In a bowl, combine the rolled oats and water. Let them sit for about 30 minutes to absorb and soften.
  2. In a separate bowl, dissolve the yeast in warm milk and let it rest for 5-10 minutes until bubbly. Add the molasses, brown sugar, and salt to the oat mixture and stir until well combined.
  3. Stir in the yeast mixture into the oat mixture, mixing well. Gradually add flour, one cup at a time, until a dough forms.
  4. On a floured surface, knead the dough for 5-10 minutes until smooth and elastic.
  5. Place the kneaded dough in a greased bowl, cover it, and let it rise in a warm place for about 1 hour or until it has doubled in size.
  6. Once risen, punch down the dough, divide it into equal portions, and shape into rolls on a baking sheet lined with parchment paper.
  7. Cover the rolls with a towel and let them rise for another 30-45 minutes until puffy.
  8. Preheat the oven to 375°F (190°C). Bake the rolls for 15-20 minutes until golden brown.
  9. Brush the tops with melted butter after baking and allow to cool slightly before serving.

Notes

Store leftover rolls in an airtight container at room temperature for up to 2 days, or freeze for up to 3 months.
