Description

Delicious and easy-to-make raspberry cheesecake bars, combining creamy cheesecake and fresh raspberries on a buttery graham cracker crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup fresh raspberries
  • 2 tablespoons lemon juice

Instructions

  1. In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a lined 9×9 inch baking dish to form the crust.
  2. In another bowl, beat the cream cheese until smooth. Gradually add powdered sugar and vanilla; mix until combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  4. Add the lemon juice and gently mix in the raspberries.
  5. Pour the cheesecake mixture over the crust and spread evenly.
  6. Refrigerate for at least 4 hours, or until set.
  7. Once set, cut into bars and serve chilled.

Notes

For a different flavor profile, consider using other berries or adding chocolate ganache on top.
