Delicious and easy-to-make raspberry cheesecake bars, combining creamy cheesecake and fresh raspberries on a buttery graham cracker crust.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 cup fresh raspberries
- 2 tablespoons lemon juice
Instructions
- In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a lined 9×9 inch baking dish to form the crust.
- In another bowl, beat the cream cheese until smooth. Gradually add powdered sugar and vanilla; mix until combined.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Add the lemon juice and gently mix in the raspberries.
- Pour the cheesecake mixture over the crust and spread evenly.
- Refrigerate for at least 4 hours, or until set.
- Once set, cut into bars and serve chilled.
Notes
For a different flavor profile, consider using other berries or adding chocolate ganache on top.
