Ingredients

  • 1 cup rolled oats
  • 1/2 cup nut butter (peanut butter or almond butter)
  • 1/3 cup honey or maple syrup
  • 1/2 cup protein powder
  • 1/4 cup chocolate chips (optional)
  • 1/4 cup ground flaxseed or chia seeds
  • 1 tsp vanilla extract

Instructions

  1. In a large mixing bowl, combine rolled oats, nut butter, honey (or maple syrup), protein powder, chocolate chips (if using), ground flaxseed, and vanilla extract. Stir until well combined.
  2. If the mixture feels too dry, add a bit more nut butter or honey. If it’s too wet, sprinkle in more oats or protein powder.
  3. Use your hands to roll the mixture into small balls, about 1 inch in diameter.
  4. Place the energy balls on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to firm them up.
  6. Store in an airtight container in the fridge for up to a week.
