Ingredients

- 1 cup pecans, finely chopped
- 1 cup dates, pitted
- 1/4 cup maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup coconut flour (optional, for texture)
Instructions
- Combine the pecans and dates in a food processor. Process until they form a sticky mixture.
- Add the maple syrup, vanilla extract, salt, and coconut flour (if using) to the processor. Process until fully combined into a thick, dough-like consistency.
- Scoop out small portions and roll them into bite-sized balls, about the size of a tablespoon.
- Place the bites on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to firm up. Serve chilled and enjoy!
