- 720 ml heavy whipping cream, chilled
- 40 grams powdered sugar
- 2 teaspoons vanilla extract
- 226 grams cream cheese, softened
- Assorted berries (strawberries, blueberries, etc.)
- Graham crackers
Instructions
- In a large mixing bowl, beat the chilled heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
- In another bowl, mix the softened cream cheese until smooth.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- In a rectangular dish, layer graham crackers, followed by a layer of the cream mixture, and then a layer of berries. Repeat the layers until all ingredients are used up, finishing with the cream on top.
- Cover and refrigerate the cake for at least 4 hours or overnight to set.
- Serve chilled and enjoy your delicious icebox cake!
Notes
For best results, chill your mixing bowl and beaters before whipping cream. Use fresh ripe berries for optimal flavor.
