Ingredients

Scale
  • 720 ml heavy whipping cream, chilled
  • 40 grams powdered sugar
  • 2 teaspoons vanilla extract
  • 226 grams cream cheese, softened
  • Assorted berries (strawberries, blueberries, etc.)
  • Graham crackers

Instructions

  1. In a large mixing bowl, beat the chilled heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  2. In another bowl, mix the softened cream cheese until smooth.
  3. Gently fold the whipped cream into the cream cheese mixture until well combined.
  4. In a rectangular dish, layer graham crackers, followed by a layer of the cream mixture, and then a layer of berries. Repeat the layers until all ingredients are used up, finishing with the cream on top.
  5. Cover and refrigerate the cake for at least 4 hours or overnight to set.
  6. Serve chilled and enjoy your delicious icebox cake!

Notes

For best results, chill your mixing bowl and beaters before whipping cream. Use fresh ripe berries for optimal flavor.
