- 1 bag of popcorn (unpopped or pre-popped)
- 1 cup of unsalted butter
- 2 cups of brown sugar
- 1/2 cup of corn syrup
- 1/2 teaspoon of salt
- 1 teaspoon of baking soda
- 1 teaspoon of vanilla extract
Instructions
- Prepare the popcorn according to the package instructions and set aside in a large bowl.
- Melt the butter in a saucepan over medium heat. Stir in brown sugar, corn syrup, and salt, bringing to a gentle boil while stirring constantly.
- Let the mixture boil without stirring for 4-5 minutes, then remove from heat and quickly stir in baking soda and vanilla extract.
- Pour the caramel mixture over the popcorn and stir until evenly coated. Spread the popcorn onto a baking sheet lined with parchment paper.
- Bake in a preheated oven at 250°F (120°C) for 1 hour, stirring every 15 minutes.
- Allow to cool completely before breaking into pieces and serving.
Notes
For an extra crunch, let the caramel corn cool completely before storing and consider adding nuts or M&Ms for variation.
