Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix the vegetable oil and eggs until thoroughly combined.
- Gradually add the wet mixture to the dry ingredients, mixing until just combined.
- Fold in the grated carrots, crushed pineapple, nuts (if using), and vanilla extract.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to wire racks.
- Frost with cream cheese frosting if desired and serve.
Notes
Use freshly grated carrots for the best texture and flavor. Optional add-ins include raisins or shredded coconut for extra texture.
