Description

Deliciously moist banana muffins bursting with flavor, perfect for breakfast or a snack.


Ingredients

  • 2 to 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Mash the ripe bananas with a fork until smooth. Stir in the melted butter until fully combined.
  3. Add the baking soda and a pinch of salt, mixing well.
  4. Incorporate the sugar, beaten egg, and vanilla extract, mixing until well combined.
  5. Stir in the flour and nuts until just combined, being careful not to over-mix.
  6. Scoop the batter into the muffin tin, filling each cup about 2/3 full.
  7. Bake for about 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let the muffins cool for a few minutes before transferring them to a wire rack.

Notes

Use very ripe bananas for best flavor. Muffins are best served warm.
