- 2 to 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup chopped walnuts or pecans
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- Mash the ripe bananas with a fork until smooth. Stir in the melted butter until fully combined.
- Add the baking soda and a pinch of salt, mixing well.
- Incorporate the sugar, beaten egg, and vanilla extract, mixing until well combined.
- Stir in the flour and nuts until just combined, being careful not to over-mix.
- Scoop the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for about 18-20 minutes or until a toothpick inserted comes out clean.
- Let the muffins cool for a few minutes before transferring them to a wire rack.
Notes
Use very ripe bananas for best flavor. Muffins are best served warm.
