Description

Ingredients

  • 1 cup softened butter
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 2 large eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mint chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, brown sugar, vanilla extract, and peppermint extract until smooth.
  3. Beat in the eggs one at a time, mixing well after each addition.
  4. In another bowl, combine the all-purpose flour, baking soda, and salt. Gradually blend into the wet mixture until just combined.
  5. Stir in the mint chocolate chips.
  6. Drop rounded tablespoons of cookie dough onto ungreased baking sheets. Bake for 9 to 11 minutes until the edges are golden and centers are still soft.
  7. Cool on the baking sheet briefly before transferring to wire racks to cool completely.

Notes

For a chewy texture, do not overbake the cookies. Optionally chill the dough for 30 minutes before baking for extra chewiness.
