- 1 cup softened butter
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 2 large eggs
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup mint chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, brown sugar, vanilla extract, and peppermint extract until smooth.
- Beat in the eggs one at a time, mixing well after each addition.
- In another bowl, combine the all-purpose flour, baking soda, and salt. Gradually blend into the wet mixture until just combined.
- Stir in the mint chocolate chips.
- Drop rounded tablespoons of cookie dough onto ungreased baking sheets. Bake for 9 to 11 minutes until the edges are golden and centers are still soft.
- Cool on the baking sheet briefly before transferring to wire racks to cool completely.
Notes
For a chewy texture, do not overbake the cookies. Optionally chill the dough for 30 minutes before baking for extra chewiness.
