Description

A delightful treat combining a flaky crust with luscious cream filling and fresh strawberries, perfect for warm-weather gatherings.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 1/4 cup heavy cream
  • 1 cup milk
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • Fresh strawberries, for topping

Instructions

  1. Preheat the oven to 375°F (190°C). In a large mixing bowl, combine the flour, powdered sugar, and salt. Use a pastry cutter to cut in the cold, cubed butter until the mixture resembles coarse crumbs. Stir in the egg yolk, mixing until a dough starts to form.
  2. Roll out the dough on a lightly floured surface and carefully press it into mini tart pans. Prick the bottoms with a fork to prevent bubbling during baking. Place in the oven and bake for about 15-20 minutes or until the crust is golden brown. Allow to cool completely.
  3. Heat the heavy cream and milk in a medium saucepan over medium heat until just simmering. In a separate bowl, whisk together the granulated sugar, cornstarch, and egg yolks until smooth. Gradually pour the hot milk mixture into the egg yolk mixture while whisking continuously. Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened. Remove from heat and stir in the vanilla extract.
  4. Fill each cooled tart shell with the prepared pastry cream. Top generously with fresh strawberries, arranged appealingly. Refrigerate for at least 30 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Unbaked tart shells can be frozen, but filled tarts shouldn’t be frozen as they may lose texture.
