Description

Delicious bite-sized blueberry pies with a flaky crust, perfect for snacks or gatherings.


Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup chilled, diced unsalted butter
  • 1/4 cup ice water
  • 2 cups fresh blueberries
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, mix flour and salt, then add cold butter and blend until resembling coarse crumbs. Gradually mix in ice water until dough holds together.
  3. Divide dough into golf ball-sized balls and roll each out into circles.
  4. Combine blueberries, sugar, cornstarch, lemon juice, and vanilla in another bowl and fill the mini crusts with the mixture.
  5. Bake for 20-25 minutes until crusts are golden brown and filling is bubbly.
  6. Let cool slightly before serving.

Notes

For best results, chill butter and avoid overworking dough. Use fresh or frozen blueberries as desired.
