Ingredients

- 1 and 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup chilled, diced unsalted butter
- 1/4 cup ice water
- 2 cups fresh blueberries
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, mix flour and salt, then add cold butter and blend until resembling coarse crumbs. Gradually mix in ice water until dough holds together.
- Divide dough into golf ball-sized balls and roll each out into circles.
- Combine blueberries, sugar, cornstarch, lemon juice, and vanilla in another bowl and fill the mini crusts with the mixture.
- Bake for 20-25 minutes until crusts are golden brown and filling is bubbly.
- Let cool slightly before serving.
Notes
For best results, chill butter and avoid overworking dough. Use fresh or frozen blueberries as desired.
