Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups shredded cheese
  • 1 bag tater tots
  • Chopped green onions (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large skillet, cook the ground beef over medium heat until browned, breaking into small pieces.
  3. Add the drained black beans, corn, taco seasoning, and salsa to the skillet, stirring until well combined.
  4. In a greased baking dish, spread the beef mixture evenly. Top with a layer of tater tots and sprinkle with shredded cheese.
  5. Bake for 25-30 minutes or until tater tots are golden and cheese is melted and bubbly.
  6. Remove from oven and garnish with chopped green onions before serving.
