- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded cheese
- 1 bag tater tots
- Chopped green onions (for garnish)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large skillet, cook the ground beef over medium heat until browned, breaking into small pieces.
- Add the drained black beans, corn, taco seasoning, and salsa to the skillet, stirring until well combined.
- In a greased baking dish, spread the beef mixture evenly. Top with a layer of tater tots and sprinkle with shredded cheese.
- Bake for 25-30 minutes or until tater tots are golden and cheese is melted and bubbly.
- Remove from oven and garnish with chopped green onions before serving.
Notes
For added flavor, use ground turkey or chicken. You can add veggies like bell peppers for extra nutrition.
