Description

A delightful and vibrant soup packed with sweet corn, fragrant spices, and garnished with fresh herbs and cheese, reminiscent of classic Mexican street corn.


Ingredients

  • 4 cups corn kernels (fresh or frozen)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk or cream
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/2 cup crumbled queso fresco (for garnish)
  • Chopped cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a large pot, sauté the chopped onion and minced garlic over medium heat until soft, about 5 minutes.
  2. Add the corn kernels to the pot and sauté for another 5 minutes.
  3. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 15 minutes.
  4. Use an immersion blender to puree the soup until smooth. Stir in the milk or cream, chili powder, cumin, salt, and pepper. Gently heat through but do not let it boil.
  5. Serve hot, garnished with crumbled queso fresco, chopped cilantro, and lime wedges.

Notes

For a smokier flavor, try adding smoked paprika or roasted corn. Adjust the spice level as desired.
