- 2 cups all-purpose flour
- 4 cups milk
- 4 large eggs
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1 tablespoon matcha powder
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- In a bowl, whisk together flour, milk, eggs, sugar, salt, and matcha powder until smooth and well combined.
- Heat a non-stick skillet over medium heat and lightly grease it. Pour in enough batter to cover the bottom of the pan and cook until the edges are golden. Flip and cook the other side.
- Repeat until all batter is used, stacking the crepes on a plate.
- In a separate bowl, whip heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- To assemble, place one crepe on a serving plate, spread a layer of whipped cream, and top with another crepe. Repeat until all crepes are stacked.
- Chill for at least 120 minutes before serving. Slice and enjoy!
