A sweet and tangy mango chutney that pairs beautifully with various dishes.
Ingredients

- 2 ripe mangoes, diced
- 1 onion, finely chopped
- 1 cup sugar
- 1 cup vinegar
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1/2 teaspoon chili powder
- Salt to taste
Instructions
- In a saucepan, combine the diced mangoes, onion, sugar, and vinegar.
- Add the minced ginger, garlic, cumin seeds, mustard seeds, chili powder, and salt to the mix.
- Cook over medium heat, stirring occasionally until the mangoes are soft and the mixture thickens, about 20-30 minutes.
- Allow to cool, then store in sterilized jars in the refrigerator.
- Serve with curry, meats, or as a condiment to enhance any meal.
