Ingredients
Scale
- 4 cups mixed greens
- 1 can (15 ounces) mandarin oranges, drained
- 1/2 cup sliced almonds
- 1/4 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons white wine vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Begin by gathering all your ingredients. Rinse the mixed greens under cold water, then spin dry in a salad spinner or pat with a paper towel to remove excess moisture.
- In a large bowl, combine the prepared mixed greens, drained mandarin oranges, sliced almonds, and thinly sliced red onion.
- In a small jar, add the olive oil, white wine vinegar, honey, a pinch of salt, and a dash of pepper. Secure the lid tightly and shake vigorously until the ingredients are well combined into a smooth dressing.
- Pour the dressing over the salad mix and toss gently to ensure everything is coated well. Finally, sprinkle the crumbled feta cheese on top before serving.
Notes
Best enjoyed fresh, but can last up to 2 days in an airtight container. Keep dressing separate until ready to serve.
