- 2 cups grated zucchini
- 1 cup all-purpose flour
- 1 cup almond flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 2 eggs
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- Optional: nuts or raisins
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix together the grated zucchini, applesauce, honey (or maple syrup), eggs, vegetable oil, and vanilla extract until well combined.
- In another bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, mixing gently until just combined. If adding nuts or raisins, fold them in.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
- Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Store wrapped tightly for up to 3 days at room temperature or freeze slices for up to 2 months.
