Description

A delicious and healthier version of classic zucchini bread, balancing sweet and savory flavors with reduced sugar.


Ingredients

  • 2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • Optional: nuts or raisins

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the grated zucchini, applesauce, honey (or maple syrup), eggs, vegetable oil, and vanilla extract until well combined.
  3. In another bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined. If adding nuts or raisins, fold them in.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  7. Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
