- 1 pound baby potatoes
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked bacon, crumbled
- 2 green onions, chopped
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 400°F (200°C). Wash and dry the baby potatoes, then cut them in half and place them on a baking sheet. Drizzle with olive oil and season with salt and pepper.
- Bake for 20-25 minutes or until tender. The insides should feel soft when pierced with a fork.
- Remove from the oven and allow to cool slightly. Once cool enough to handle, scoop out a small portion of the center of each potato half, creating a small boat.
- In a bowl, mix the sour cream, cheddar cheese, crumbled bacon, and chopped green onions until well combined.
- Spoon the mixture into each potato half, generously filling each boat.
- Return to the oven for an additional 5-10 minutes to heat through and allow the cheese to melt.
- Serve warm, and enjoy the delicious flavors!
Notes
Use uniform-sized baby potatoes for even cooking. Customize the filling with your favorite toppings.
