Description

Delightful appetizer with crispy exterior and creamy filling perfect for parties or as a snack.


Ingredients

  • 1 pound baby potatoes
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked bacon, crumbled
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and dry the baby potatoes, then cut them in half and place them on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  2. Bake for 20-25 minutes or until tender. The insides should feel soft when pierced with a fork.
  3. Remove from the oven and allow to cool slightly. Once cool enough to handle, scoop out a small portion of the center of each potato half, creating a small boat.
  4. In a bowl, mix the sour cream, cheddar cheese, crumbled bacon, and chopped green onions until well combined.
  5. Spoon the mixture into each potato half, generously filling each boat.
  6. Return to the oven for an additional 5-10 minutes to heat through and allow the cheese to melt.
  7. Serve warm, and enjoy the delicious flavors!

Notes
