- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup fresh raspberries (or raspberry preserves)
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish.
- Beat together the softened butter and granulated sugar until creamy and light.
- Add the eggs one at a time, beating well after each addition. Mix in the fresh lemon juice and lemon zest.
- Whisk together the flour, baking powder, and salt in a separate bowl. Gradually add the dry mixture to the wet mixture until just combined.
- Pour half of the batter into the prepared baking dish, smoothing it out.
- Spoon the fresh raspberries (or preserves) over the batter.
- Drop spoonfuls of the remaining batter on top of the raspberries, then swirl with a knife or skewer.
- Bake for 30-35 minutes, or until set and a toothpick comes out clean.
- Allow to cool before cutting into squares.
Notes
For stronger lemon flavor, add an extra teaspoon of lemon zest. These bars can be stored in an airtight container at room temperature for up to three days.
