- 1 cup almond flour
- 1 3/4 cup powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- 1/4 teaspoon cream of tartar
- 1 teaspoon lemon juice
- Food coloring (yellow)
- 1/2 cup heavy cream
- 4 ounces white chocolate
- 1/4 cup lemon juice
- Zest of 1 lemon
Instructions
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Sift together the almond flour and powdered sugar in a bowl to eliminate lumps.
- Beat the egg whites in another bowl until soft peaks form. Gradually add granulated sugar and cream of tartar until stiff peaks form.
- Add lemon juice and yellow food coloring to the egg mixture. Gently fold in the almond flour mixture until just combined.
- Pipe the batter onto prepared baking sheets, creating small circles about 1.5 inches in diameter. Let sit for 30 minutes at room temperature.
- Bake the macarons for 18-20 minutes, or until risen and tops are dry. Cool completely on the baking sheet.
- Heat heavy cream in a saucepan until just simmering. Pour over chopped white chocolate, adding lemon juice and zest. Stir until smooth for the ganache.
- Pair up the cooled macaron shells and fill each with the lemon ganache. Sandwich them together.
- Let the assembled macarons set for a few hours before serving to meld the flavors.
Notes
Store leftovers in an airtight container in the refrigerator for up to one week, or freeze for longer storage.
