Description

Delightful French confections blending tangy lemon flavor with a sweet, creamy filling.


Ingredients

Scale
  • 1 cup almond flour
  • 1 3/4 cup powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon lemon juice
  • Food coloring (yellow)
  • 1/2 cup heavy cream
  • 4 ounces white chocolate
  • 1/4 cup lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Sift together the almond flour and powdered sugar in a bowl to eliminate lumps.
  3. Beat the egg whites in another bowl until soft peaks form. Gradually add granulated sugar and cream of tartar until stiff peaks form.
  4. Add lemon juice and yellow food coloring to the egg mixture. Gently fold in the almond flour mixture until just combined.
  5. Pipe the batter onto prepared baking sheets, creating small circles about 1.5 inches in diameter. Let sit for 30 minutes at room temperature.
  6. Bake the macarons for 18-20 minutes, or until risen and tops are dry. Cool completely on the baking sheet.
  7. Heat heavy cream in a saucepan until just simmering. Pour over chopped white chocolate, adding lemon juice and zest. Stir until smooth for the ganache.
  8. Pair up the cooled macaron shells and fill each with the lemon ganache. Sandwich them together.
  9. Let the assembled macarons set for a few hours before serving to meld the flavors.

Notes

Store leftovers in an airtight container in the refrigerator for up to one week, or freeze for longer storage.
