- 50g active sourdough starter
- 350g water
- 500g bread flour
- 11g salt
- 150g fresh blueberries
- Zest of 1 lemon
- 113g room temperature butter (8 tablespoons)
- 75g mashed fresh blueberries (1/2 cup)
- 45g honey (2 tablespoons)
- Pinch of salt
Instructions
- Combine the active sourdough starter and water in a mixing bowl, mixing well to ensure the starter is fully dissolved.
- Gradually incorporate the bread flour and salt into the mixture, stirring until it forms a rough dough. Allow the dough to rest for about 30 minutes.
- Gently mix in the lemon zest and mashed blueberries along with honey into the resting dough, folding until well distributed.
- Cover the bowl with a cloth and let the dough rise at room temperature for about 8 hours.
- Once the dough has risen, turn it onto a floured surface, shape it into a round loaf, and place it on a parchment-lined baking sheet.
- Bake the bread for approximately 45 minutes or until a golden-brown crust forms.
Notes
Store the bread at room temperature in a paper bag for up to three days. For longer storage, wrap it tightly and freeze for up to three months.
