Description

A delightful dessert combining rich bread pudding with zesty lemon and sweet blueberries.


Ingredients

  • 4 cups day-old bread, cubed
  • 1 cup blueberries (fresh or frozen)
  • 2 cups milk
  • 1/2 cup sugar
  • 3 large eggs
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • Butter, for greasing the dish

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish with butter.
  2. Whisk together the milk, sugar, eggs, lemon juice, lemon zest, vanilla extract, cinnamon, and salt until well combined.
  3. Add the cubed bread and blueberries to the mixture, gently folding to incorporate.
  4. Pour the mixture into the prepared baking dish and ensure the bread is evenly distributed.
  5. Bake for 35-40 minutes, or until the pudding is set and the top is golden brown.
  6. Allow to cool slightly before serving, optionally drizzled with lemon juice or a dusting of powdered sugar.
