- 2 cups sweetened condensed milk
- ¾ cup fresh key lime juice
- 4 large egg yolks

Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan with cooking spray or butter.
- Combine graham cracker crumbs, sugar, and melted butter in a medium bowl. Mix thoroughly until the crumbs are moistened. Press the mixture firmly into the bottom of the prepared pan to form a crust.
- Bake the crust in the preheated oven for about 10 minutes or until lightly golden. Remove the crust and let it cool slightly.
- Whisk together the sweetened condensed milk, fresh key lime juice, egg yolks, and lime zest in another bowl until smooth and well combined.
- Pour the lime mixture over the cooled crust and spread it evenly across the surface.
- Bake for an additional 15-20 minutes, or until the filling is set but still slightly jiggly in the center.
- Let the bars cool to room temperature, then refrigerate for at least 2 hours before cutting them into squares.
- Serve chilled, topped with a dollop of whipped cream and garnished with lime wedges.
Notes
For a deeper flavor, consider adding an extra tablespoon of lime zest to the filling. Use fresh lime juice for the best flavor; bottled juice lacks the bright taste of fresh limes.
