Ingredients

  • ½ cup sugar
  • ½ cup unsalted butter, melted
  • 2 cups sweetened condensed milk
  • ¾ cup fresh key lime juice
  • 4 large egg yolks
  • 1 teaspoon lime zest

  • Lime wedges (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan with cooking spray or butter.
  2. Combine graham cracker crumbs, sugar, and melted butter in a medium bowl. Mix thoroughly until the crumbs are moistened. Press the mixture firmly into the bottom of the prepared pan to form a crust.
  3. Bake the crust in the preheated oven for about 10 minutes or until lightly golden. Remove the crust and let it cool slightly.

  7. Let the bars cool to room temperature, then refrigerate for at least 2 hours before cutting them into squares.

For a deeper flavor, consider adding an extra tablespoon of lime zest to the filling. Use fresh lime juice for the best flavor; bottled juice lacks the bright taste of fresh limes.
