- 1 cup graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup unsalted butter, melted
- 2 cans (14 oz each) sweetened condensed milk
- 3/4 cup key lime juice
- 4 large egg yolks
- Zest of 2 limes
- Whipped cream for topping
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish.
- Combine the graham cracker crumbs, sugar, and melted butter in a medium bowl. Mix until well coated and press into the bottom of the baking dish.
- Bake the crust for about 10 minutes until lightly golden, and allow it to cool.
- Mix the sweetened condensed milk, key lime juice, egg yolks, and lime zest in another bowl. Pour the lime mixture over the cooled crust and spread it evenly.
- Bake for an additional 15-20 minutes or until the filling is set.
- Cool at room temperature, then refrigerate for at least 2 hours before serving. Cut into bars and top with whipped cream.
Notes
Use fresh key lime juice for the best flavor and allow the bars to chill thoroughly for a better texture.
