- 8 oz cream cheese, softened
- 1/4 cup granulated erythritol (or sweetener of choice)
- 1/4 cup sour cream
- 1/4 cup fresh lime juice
- 1 tsp lime zest
- 1 tsp vanilla extract
- 1/2 cup almond flour (optional for crust)
- 2 tbsp melted butter (optional for crust)
- 1 tbsp sweetener (optional for crust)
- 2 tsp gelatin (optional for firmer cheesecake)
Instructions
- Preheat the oven to 350°F (175°C) if you are making a crust.
- In a mixing bowl, combine the softened cream cheese, erythritol, sour cream, lime juice, lime zest, and vanilla extract. Blend until smooth and creamy.
- If using gelatin, dissolve it in warm water and mix it into the cheesecake mixture. For a crust, combine almond flour, melted butter, and sweetener, then press into the bottom of a small springform pan and bake for 10 minutes. Allow to cool.
- Pour the cheesecake mixture over the cooled crust or omit the crust and simply pour into the springform pan. Smooth the top and refrigerate for at least 2-4 hours until set. Serve with lime slices or whipped cream.
Notes
Ensure cream cheese is at room temperature for a smoother texture. Fresh lime juice enhances flavor significantly.
