Description

A classic roast chicken infused with fresh herbs and lemon, perfect for any family gathering.


Ingredients

Scale
  • 1 whole chicken (about 45 lbs)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • 1 cup chicken broth or white wine (for pan drippings)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, combine olive oil, minced garlic, chopped rosemary, thyme, parsley, lemon zest, lemon juice, salt, and pepper to create an herb rub.
  3. Pat the chicken dry and rub the herb mixture all over the chicken.
  4. Place chicken breast-side up in a roasting pan and pour chicken broth or wine into the bottom of the pan.
  5. Roast for about 1 hour and 20 minutes until the internal temperature reaches 165°F (74°C) and juices run clear.
  6. Let the chicken rest for 15 minutes before carving and drizzling with pan drippings.

Notes

Let the chicken come to room temperature before cooking for even results. Use a meat thermometer for the most accurate doneness check.
