A classic roast chicken infused with fresh herbs and lemon, perfect for any family gathering.
Ingredients

- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- 1 lemon, zested and juiced
- Salt and pepper to taste
- 1 cup chicken broth or white wine (for pan drippings)
Instructions
- Preheat your oven to 425°F (220°C).
- In a small bowl, combine olive oil, minced garlic, chopped rosemary, thyme, parsley, lemon zest, lemon juice, salt, and pepper to create an herb rub.
- Pat the chicken dry and rub the herb mixture all over the chicken.
- Place chicken breast-side up in a roasting pan and pour chicken broth or wine into the bottom of the pan.
- Roast for about 1 hour and 20 minutes until the internal temperature reaches 165°F (74°C) and juices run clear.
- Let the chicken rest for 15 minutes before carving and drizzling with pan drippings.
Notes
Let the chicken come to room temperature before cooking for even results. Use a meat thermometer for the most accurate doneness check.
