- 1 beef roast (3–4 lbs)
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- 1 cup beef broth
- Optional: carrots, potatoes, onions (for roasting)
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, combine minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and pepper to create a rub.
- Rub the herb mixture all over the beef roast. Sear in a hot skillet with olive oil until golden-brown, about 3-5 minutes per side.
- Add beef broth and optional vegetables around the roast. Cover and roast in the oven for 1.5 to 2 hours until the internal temperature reaches 135°F (57°C) for medium-rare.
- Rest the roast covered with foil for 15-20 minutes before slicing and serving.
Notes
For added flavor, use seasonal vegetables. A meat thermometer is recommended for perfect doneness.
