Description
A delightful hybrid perfect for breakfast or dessert, featuring rich banana flavor and optional berries.
Ingredients
Scale
- 3 ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1 cup diced fresh or frozen berries (optional)
Instructions
- Preheat the oven to 350°F (175°C). Gather all your ingredients, ensuring your bananas are ripe for the best flavor.
- In a large bowl, mix the mashed bananas with the melted butter until well blended. Then, stir in the sugar, eggs, and vanilla extract, mixing until everything is nicely incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add these dry ingredients to the banana mixture, stirring gently just until combined. If you’re adding berries, fold them in gently at this stage.
- Pour the batter into a greased baking dish. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Once baked, let your cobbler cool before slicing.
Notes
Serve warm with vanilla ice cream or whipped cream. Store leftovers in an airtight container for up to 2 days or refrigerate for up to a week.
