Instructions
- Preheat your oven to 425°F (220°C). Slice the zucchini into rounds or sticks.
- In one bowl, beat the eggs. In another bowl, combine breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- Dip each zucchini piece into the beaten egg, then roll in the breadcrumb mixture until well covered.
- Place the coated zucchini on a baking sheet lined with parchment paper. Drizzle with olive oil. Bake for 20-25 minutes until golden brown. Optional: broil for extra crunch.
- Serve hot with your favorite dipping sauce.
