Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1 egg yolk
- 1/2 cup pastry cream or vanilla pudding
- Assorted fresh fruits (e.g., berries, kiwi, mango)
- Apricot glaze (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, softened butter, powdered sugar, and salt. Mix until crumbly.
- Add the egg yolk and mix until a smooth dough forms.
- Press the dough into the bottoms and up the sides of mini tartlet pans to shape the crusts.
- Bake for 15-18 minutes or until golden brown. Allow to cool completely.
- Fill each tartlet shell with pastry cream or vanilla pudding.
- Arrange fresh fruits beautifully on top of the filling.
- Brush with apricot glaze if desired.
