- 1 1/2 cups chocolate cookies (crushed)
- 1/2 cup unsalted butter (melted)
- 1 cup bittersweet chocolate (chopped)
- 1/2 cup heavy cream
- 2 tablespoons espresso powder
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup cocoa powder (for dusting, optional)
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix the crushed chocolate cookies with melted butter until well combined. Press the mixture into the bottom of a greased 9×9 inch baking pan to form a crust. Bake for 10 minutes, then let it cool.
- In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped chocolate and espresso powder. Stir until smooth and fully melted.
- Add sugar, vanilla extract, and salt to the chocolate mixture, stirring until combined. Pour the chocolate mixture over the cooled crust and spread it evenly.
- Refrigerate the tart squares for at least 2 hours to set. Once set, cut into squares and dust with cocoa powder if desired. Enjoy!
