- 2 cups sugar
- 1 tsp baking soda

- 1 cup vegetable oil
- 3 large eggs
- 1 tsp vanilla extract
- 1 can (8 oz) crushed pineapple, drained
- 2 cups mashed ripe bananas
- 1 cup chopped pecans
- 1 cup shredded coconut
- Cream cheese frosting for topping
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- Combine the all-purpose flour, sugar, baking soda, salt, and ground cinnamon in a large bowl. Whisk until well blended.
- Whisk together the vegetable oil, eggs, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the crushed pineapple, mashed ripe bananas, chopped pecans, and shredded coconut.
- Divide the batter evenly among the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cakes cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.
- Frost the cooled cakes with cream cheese frosting before serving.
Notes
Ensure your bananas are very ripe for maximum sweetness. Can substitute pecans with walnuts or almonds.
