- 1 cup diced fresh peaches
- 4 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/4 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then mix in the honey and vanilla extract thoroughly.
- Whisk together the flour, baking powder, and salt in another bowl. Gradually add the dry ingredients to the wet mixture.
- Fold in the diced peaches gently until evenly distributed. Spoon the batter into the prepared cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let the cupcakes cool completely before frosting.
- Beat together the softened cream cheese, powdered sugar, and heavy cream until smooth and creamy. Once the cupcakes are cooled, generously frost with the cream cheese mixture.
Notes
Store in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months. Frost after thawing for best texture.
