Ingredients

- 2 cups corn kernels (fresh or canned)
- 1 cup milk
- 1 cup sour cream
- 1/2 cup honey
- 1/2 cup melted butter
- 1 cup cornmeal
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the corn kernels, milk, sour cream, honey, and melted butter. Stir until well blended for a smooth texture.
- In another bowl, whisk together the cornmeal, baking powder, salt, and black pepper.
- Gradually stir the dry ingredients into the wet mixture until just combined. If desired, fold in the shredded cheese.
- Pour the mixture into a greased 9×13 inch baking dish. Bake for 30-35 minutes or until golden brown and set.
- Allow the casserole to cool slightly before serving.
Notes
Serve warm, optionally garnished with fresh herbs. Can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
