Instructions

- Creaming together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine the flour, baking soda, cinnamon, and salt in a separate bowl, then mix into the creamed mixture.
- Stir in the oats until well combined.
- Drop spoonfuls of dough onto ungreased baking sheets and bake for 10-12 minutes until golden brown.
- Let the baked cookies cool on wire racks.
- Beat together the powdered sugar, shortening, and vanilla extract for the filling.
- Spread the filling between two cookies to make sandwiches.
